This version of the traditional matri gets its name owing to the shape of the flaky golden crackers. Made with refined white flour and peppered minimally with salt and a couple of spices, the matris are rolled out into neat round discs and fried till they gain a rich golden hue. Initially popular in Rajasthan, gol matris today are available pretty much everywhere.
